Monday Meal Madness- Coconut Chicken w/ veggies and Brown Rice

This was so good and actually very simple to make! I think this is a little different than Rona had in mind, but it was so good! Very filling without leaving you feeling stuffed!

2 tablespoons peanut or olive oil
2 tablespoons garlic, minced
3/4 cup Vidalia onions, diced
8 chicken breasts, boned, skinned, pounded to 1/2" thickness

In a heavy bottomed skillet, sauté onions and garlic. Add chicken breasts and brown lightly. Do not allow garlic to brown (you might want to add it towards the end of the sauté).

3/4 cup white vinegar
2 1/2 cups water
1 chicken bouillon cube
2 cloves garlic
1/2 teaspoon black pepper
1/4 teaspoon paprika
1 teaspoon oregano
1/4 cup amino acids (soy sauce supplement)
3 teaspoons sugar

In a blender, combine sauce ingredients. Add to skillet. Cover and simmer, stirring occasionally, until chicken is tender.

Garnish chicken with unsweetened coconut flakes and put the veggies and garlic with a little bit of the sauce over the top of the chicken which sits on a bed of brown rice.

New Traditions at VioletRay Photography!

*fork on wine glass* May I have your attention please?

Indeed this shall be my new tradition. Every Monday when permitting we'll have a comment game where ya'll give me a list of dinners, I let Jer choose from the list, I make the winning recipe, and I'll post the story & pictures of the Monday Dinner!

Each week, there will be a prize offered from me, VioletRay Photography, and I'll try to change up the prize a little each week to make it a lil more challenging and fun! After posting the picture I'll say what I did to make the meal, and then we'll see if YOU decide to remake it! =D Invite your friends and everyone join in! This will be so much FUN!!!

Here's tonights, recipe courtesy of Marcy Kynaston. Marcy won a 10% off coupon to my Etsy Fine Art store! Congrats!

Heart to God, and a Hand to Man

All my life I've wanted to be a hero. I want my life to count, and I look at my brother (Army; Iraq) and sister (Navy; Assault Ship-Japan) and I am so proud b/c they are both being the hero I want to be. So I've asked myself, how can I make a difference from here in my town? How can the actions applied in Florence, MT make a difference nation-wide? Here's what I've come up:

65% of the proceeds from prints purchased from my Etsy shop will be donated to my friends & family in Sendai, Japan. The people seeking refuge in the shelters are being forced back into the streets because of a lack of food and water. THIS is how I am helping them, so I need your assistance! Please pass this on, and keep checking back as I will be adding more prints

There are so many amazing missions out there, and I'm so thankful that we can band together to make a difference. To ease the hunger pains from children and adults that are now being forced to do without. To be able to send supplies that so many of us don't even think about using on a daily basis that are now a rare commodity. Thank you for helping to make a difference. Your time, love and concern might be what keeps a family going.

"While women weep as they do now,
while children are hungry,
while hope can be found.
While one soul remains without light,
I'll fight to the very end.

A heart to God and a hand to man,
here begins the healing of our land.
A heart to God and a hand to man,
I can still hear the Hallelujah band.
A heart to God and a hand to man."

Living in Montana I've learnt that the weather is anything but predictable, but every once in a while you get that beautiful day where the sun says, "I want to be seen"

The day this image was taken was one of those days!

I Heart Faces- Best of Feb 2011

I've been DYING to use one of these pictures for my I Heart Faces contest and FINALLY it's the PERFECT moment!!!

Friends, this is Kelsey. She was sooo very honoured to get to be a model for a fashion accessory shoot that I did in Feb, and she let me know, "Any time you need a model... you just call. I'm here."
